## How is polyunsaturated fat declared on a Nutrition Facts label?

Polyunsaturated fat is voluntary, stated in grams per serving. (21 CFR 101.9(c)(2)(iii)) It becomes required when monounsaturated fat is declared, or when the label makes a claim about fatty acids or cholesterol on a food that does not meet FDA’s “fat free” criteria. (21 CFR 101.9(c)(2)(iii))
